Furofuki Daikon

Ingredients

1 daikon or carrot

greens

sea salt (pinch)

miso (light or dark)

kombu or shitake mushroom

Directions

Place a small amount of water in the bottom of a medium sized pot (enough to just cover the bottom). Break thumb nail sizes of kombu or shitake mushrooms and place into the bottom of the pot.  Turn the flame to medium and allow the water to gently boil.  Boil for several minute until you can smell the flavor in the steam.

Cut the daikon into 2 cm wedges and place them into the boiling water. Sprinkle in sea salt to taste. Let cook about 10 minutes.

Dissolve miso in a bold with water. Pour the miso over the cooked daikon and continue cooking the mixture covered. Continue stirring and cooking until all the water has boiled off and the daikon is soft. This takes about 30 minutes.
